Prof. Elfadil Elfadl Babiker’s research focuses on food science, nutrition, and protein biochemistry, spanning the food chain from field to fork. His work emphasizes improving food quality and safety through reduction of antinutrients, micronutrient fertilization, intercropping, and genetic and chemical modification of food proteins. He has advanced functional foods and nutraceuticals, particularly from date palm and moringa, and developed edible biopolymer coatings to enhance food preservation. His research integrates molecular biotechnology, food processing, and nutritional evaluation to support sustainable agriculture, food security, and human health.
